Orange Banana Bread

Those of us who buy bananas can probably agree that before you know it you end up with 2-3 overripe bananas sitting in the kitchen. Now, if you are like me it's the ultimate excuse to whip up some tasty banana bread! 

However, I wanted to mix things up recently with my banana bread so I came up with Orange Banana Bread! It carries the same amazing charm of original banana bread but kicked up in flavor with cinnamon, orange, and pecans. If you love all of these things you're going to be freaking out about this tasty loaf of magic! Warning - it's addicting!! You've been warned. Enjoy!

Orange Banana Bread:

INGREDIENTS:

  • 1/2 cup butter (partially melted or at room temperature)
  • 2/3 cup brown sugar
  • 1/2 cup honey
  • 1 orange zested entirely
  • 1 orange juiced entirely 
  • 1 tbsp cinnamon 
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • 3 ripe bananas (smashed or if using a stand mixer you can throw them in diced) 
  • 2 large eggs
  •  2 1/2 cups flour 
  • 1/2 to 1 cup chopped pecans or other nut choice** (optional)

INSTRUCTIONS:

  1. Preheat oven to 325 degrees and prepare a 9x5 loaf pan. I prefer to butter the entire loaf pan and sprinkle with flour on all sides and bottom. Set aside pan.

  2. Cream together butter, brown sugar, honey, orange zest, orange juice, cinnamon, vanilla, salt, baking soda, and baking powder until smooth. 

  3. Next, add in your bananas (smashed or if using a stand mixer you can throw them in diced) and your eggs one at a time. Mix until smooth and creamy. 

  4. Next add your flour slowly until completely incorporated. Scrape sides and bottom of bowl to ensure nothing is missing being mixed in. 

  5. Next, add your chopped nuts (optional)

  6. Once all combined pour contents into prepared loaf pan and bake for 45 minutes on the middle rack. 

  7. Pull loaf out of oven and cover lightly with tin foil and bake for another 20 minutes. 

  8. Check loaf by inserting toothpick in center and sides of loaf. The toothpick should come out clean. If it does not continue baking for 5 more minutes covered. Repeat these steps until cooked through. 

  9. Once cooked let loaf cool for 15 minutes. To remove from loaf pan scrape around edge of baked loaf with a sharp knife and tip upside down to loosen loaf out. Flip up right and place loaf on the desired serving dish.
